Description

Sourced from a single vineyard at approximately 600 metres above sea level in the cool-climate region of Tumbarumba, NSW. Situated in the Snowy Mountains, this is the coolest viticultural area on mainland Australia. The vineyard features basalt soils and a VSP (Vertical Shoot Positioning) trellis system with spur pruning. The fruit was handpicked in the cool of the morning and processed promptly into a static red fermenter. After a three-day cold soak, fermentation took place over seven days at warm temperatures. The wine was then pressed off skins, settled, and racked off lees to undergo malolactic fermentation. It remained on light lees for six months to build texture before being carefully racked, fined, filtered, and bottled.
